Hey Cory, thanks for reading and for the question, it’s always nice to come home and see a new comment.
I had meant to come back to this when the brew was done but it slipped my mind. Other than the notes above about yeast and pitch rate I remember thinking it could of used the addition of a dry hop. I remember the taste being pretty much spot on to what I had expected but I was hoping for a more hoppy aroma than what I had ended up with.
I had brought this beer to a Halloween party and it was a big hit. Great taste. A banana bomb hefe really lends itself well to a more aggressive hop addition than the standard for a hefe. I would definitely stick to the fruitier hops though. Not to say experimenting with something else would be a bad idea though. I’ve been thinking of doing a piney clove hefe as well.
The only other thing I can remember at this point was that I fermented for 4 weeks without a transfer to secondary and also bottle conditioned for an additional 4 weeks before drinking. Hope this helped.
